🍫: My Grandma's Chocolate Peanut Butter Balls (Made Well)

I grew up with a grandma who would make the most divine Christmas treats every year for me and my family. I remember eating so many chocolate-covered peanut butter balls when nobody was looking. Although, they were amazing, they weren’t made with the best ingredients and I don’t think I could eat them today ☺️
Cue why I created my own version of my grandma’s delicious chocolate-covered peanut butter balls. I know she would be proud of me and love them just as her own!

Ingredients:
TO MAKE THE BALLS
1/2 cup of creamy salted peanut butter
3 tbs. maple syrup
3 tbs. monk fruit
3-5 scoops of vanilla protein powder (depending on thickness)
2 tbs. coconut oil (melted on stove top and mixed in)
TO MAKE THE CHOCOLATE COATING
1/2 cup of Lily’s chocolate chips
1 tbs. of coconut oil
2 tbs. of monk fruit (optional)
Dash of pink Himalayan salt
Directions:
Combine peanut butter, syrup, monk fruit, protein powder, and melted coconut oil in a bowl and mix with silicone spatula until smooth
Using a tablespoon as a scooper, scoop out mix and roll into even balls with your hands and place on parchment paper or tin foil on a big dinner plate
Place balls in freezer for 15 minutes
In a saucepan, melt chocolate chips with coconut oil and monk fruit
Roll balls in chocolate using a fork (may want to just dive in and use your fingers to get them out as they can get a little stuck)
Place back in freezer for 15 minutes.
